1. In the emulator, click File-->Install Firmware, then select the downloaded PS3UPDAT.PUP
2. Make sure that in the Core settings there is a checkbox next to Load required libraries, then no LLEs in the settings are checked over, the emulator itself will choose the most suitable LLEs.
